Episode 1 : Haggis Hurling

Haggis is a traditional Scottish dish made from sheep's organs, oatmeal and spices – all boiled in a sheep’s intestine. Haggis Hurling is the sport of hurling a 2-pound chunk of haggis as far as possible from atop a whiskey barrel. Bob's first challenge is to learn how to prepare haggis. As if that’s not appetizing enough, he'll then train for and enter a haggis hurling championship where he'll try to beat the present World Record for Haggis Hurling – an astonishing 180 feet, 10 inches! His reward? To chase down his creation with some local Scotch whiskey.

Haggis - Scotland’s Greatest National Dish

Recipe courtesy of Kevin McKeen at A.T. McGarrity butcher shop in Ardrossan, Scotland – suppliers of the haggis used in the annual Haggis Hurling Competition. The butcher won’t give up the actual quantities of each ingredient because the Scots tend to be secretive with their haggis recipes – but if you’ve ever wondered what goes into making this strange delicacy the traditional way, here is your chance!

Ingredients:
lamb heart
lamb liver
lamb lungs
cow intestine (casing)
dried onions
dry oats
suet (beef fat)
salt and pepper
string

Directions:
1. Rinse cow intestine thoroughly and soak overnight in cold salted water.
2. Let the offal (lamb heart, liver and lungs) simmer in a pot of water overnight.
3. After organs are stewed, steep the dried onions in remaining stock.
4. Mince organs with oatmeal, onions, suet, salt and pepper.
5. If necessary, moisten with some of the organ stock so the mixture binds.
6. Fill the casing (cow’s intestine) with mixture.
7. Tie closed at edges with string.
8. Bake in oven for up to an hour and a half. Don’t overcook, or it will burst.
9. Slice open vertically.
10. Serve with neeps and tatties (turnips and potatoes) and wash down with a wee dram of Scottish whiskey, make chicken stuffed with haggis, or eat it for breakfast!
