Episode 5 : Sidewalk Chef
The town of Oatman hosts an annual sidewalk egg frying competition every year on the 4th of July. Can you really fry an egg on the sidewalk? Bob is off to the desert to find out if this popular urban legend is true. He has just four days to figure out how he can cook an egg in less than 15 minutes using only a pan and the sun's rays. Will he be able to cook the egg sunny-side-up? Or will his run at the competition be over-easy?
Steps to cooking the perfect egg, sunny-side-up:
Courtesy of Raul Gonzales, Executive Chef at the Four Seasons Hotel.
1. Use clarified butter (or some other form of fat) to grease skillet.
2. Crack egg and pour into a ring mold in the pan, to create a perfect circle.
3. Cook at low heat, to avoid bubbles around the center.
4. Keep cooking surface level.
5. Don’t let the edges brown - should be perfectly white.
6. Yolk should remain perfectly yellow and intact - don’t poke.
Cover pan with a plate or lid before the yolk hardens. Take pan off stove and let sit, covered (the egg will continue to cook for a couple of seconds).
