Episode 7 : Chile Challenge

Bob Blumer loves spicy foods. The hotter the better (at least that's what he thinks.) Like a vigilante gunslinger in a western movie he'll journey to the hot, dusty heart of the hot chile empire: Hatch, New Mexico. Located in the plains of the Rio Grande Valley, Hatch is a chile-head's Mecca. Bob will work in the fertile fields of the surrounding Hatch Valley picking chile peppers in a 40°C heat discovering enough new varieties and various tastes to satisfy a steady throng of new converts. And then he'll go further. Bob's challenge is to prove that he really can take the heat by entering the hot chile-eating contest. He'll be going head-to-head with some extremely big guys who see their ability to eat insanely hot chiles as proof of manhood. His reward? Survival, and everything he needs to know to make his very own hot sauce.

Recipe:

Diana's Chile Rellenos

Ingredients:
24 long green stemmed chilies (hot)
1 dozen eggs
3 cups flour
Salt & Pepper
2 table spoons of garlic powder
Corn oil
2lbs of Muenster cheese
1 can of spam
Method:
Step One - first I prepare the flour mix. I use a long cake pan, I put in 3 cups of flour, add about 3 tablespoons of salt, one tablespoon of pepper and 2 tablespoons of garlic in mix. (mix well together)
Step Two - Cut spam and muenster cheese in long rectangular sticks. After chile is peeled you stuff one stick of muenster cheese and one stick of spam into chile.
Step three - blend egg whites together on high until eggs white becomes stiff. Then you add half of the egg yolks into mix.
Step Four - Heat up large frying pan with about 3 cups of corn oil. Make sure oil is hot.
Step five - powder stuffed chile with flour mix, then dip into egg white, then fry until golden brown on each side of chile. (salt as they come out of frying pan and lay on paper towel).

Green Chile Chicken Wing Bake

Ingredients:
4lbs of chicken wings
2tbl spoons of garlic powder
4tbl spoons of salt
1 large can of cream of mushroom
1 large can of cream of chicken
1 can of carnation milk
1 stick of butter
1lb of hot green chile (or mild)
Method:
Step One - boil chicken wings for about 1 hour until fully cooked (boil with salt and garlic powder then drain)
Step Two - Preheat your oven at 400 degrees. Butter your chicken then bake for about 45min until crisp.
Step Three - Mix cream of chicken, cream of mushroom and carnation milk together. (whisk until lumps disappear) then you add diced green chile to the mix
Step Four - pour mix on top of crisp chicken wings evenly and bake for 20minutes.

Serve with Spanish rice - it is delicious!!
